LEBANESE OMELET "EJJEH"
Ejjeh or Omelet : Here is a recipe for a delicious Lebanese omelet. It is very easy and simple for when you get home after work, and you just want something quick and healthy. It is made out of fresh green vegetables and herbs.
From time to time I like to prepare it with the cooked inner part of the zucchinis after hollowing them and it is as good. By the way I prepared one today with the crushed zucchini and it is amazing.

INGREDIENTS: Serves: 5
6 eggs
1 cup chopped parsley
3/4 cup mint
3/4 cup chopped green onions or medium onion chopped
1/4 cup chopped oregano if desired
1 tsp salt
3/4 tsp allspice
1/4 tsp black pepper
2 tbsp flour
1/2 tsp baking powder
2 tbsp oil
PREPARATION: heat the oven to 450 degrees. Whisk the eggs first, seasoning them with salt, allspice and black pepper. Add the chopped parsley, mint, oregano and onions. Mix all the ingredients together, at last add the flour and the baking powder and mix again until well blended. If you like to add the crushed zucchini, cook them for 5 mins, strain them very well and add them after they cool down, around one cooked cup of them.
Grease an oven pan with 2 tbsp of oil, pour the omelet mixture in the pan and put it in the oven. Bake for 15 mins. from the bottom and 5 mins from top or until it becomes dark golden from both sides. This dish can be served warm or cold. It's also delicious with pita bread, labneh our famous lebanese cream cheese and cucumber. I advise you to try it as a sandwich with salad rocket 'rocca'.
