Marble cake with chocolate frosting


Marble cake: Here is my recipe for marble cake, which has become my family's favourite over the past years. It is so simple and easy to prepare and I have had it for a long time.

The idea of marbling two different coloured batters into a cake originated in Germany from the nineteenth century. The traditional marble mixture was made then with spices or molasses, with time it was replaced with chocolate.

Cooking time: 45 mins

Serves: 10 to 12

INGREDIENTS:

The cake:

4 eggs

1 tsp vanilla

1 tbsp whisky

A zest of a lemon

1 cup sugar if done with topping "1 and 1/4 cup if done without "

1/2 cup oil

1 cup milk

21/2 to 3 cups flour

2 tsp baking powder and 1/2 tsp baking soda

3 tbsp cacao

3 tbsp water

The topping :

3 tbsp butter

6 tbsp icing sugar

3 tbsp cacao powder

2 tbsp. milk

4 tbsp water

How to prepare the cake: preheat the oven to 375 degrees. In a large mixing bowl, mix the eggs, the vanilla, the whisky and the lemon zest very well using a whisk or an electric mixer. Add the sugar, the oil and the milk. Blend well until you get a light batter. In another bowl mix the flour and the baking powder together then add to the mixture beating at low speed until well blended.

Now grease a 25 cm podded round pan cake, pour 3/4 of the batter into the pan, sift the cacao then whisk into the rest of the mixture in the bowl, adding the water at the same time. Now pour it all around on top of the yellowish batter that is already in the pan, scattering the chocolate blend gradually. This will give it the marble shape after baking as shown in the picture. Bake it for 45 mins or until you insert a tooth pick into the middle and comes out clean. Set aside to cool down before doing the frosting.

How to prepare the topping: melt the butter in a small cooking pot over low heat, add the icing sugar and stir using a whisk. Add the cacao after sifting, the milk at last the water and keep stirring until the boiling point. Spread it quickly over the cooled cake using a spatula or a spoon as frosting will set up very fast. If you desire you can pour the frosting on top of the cake and let it drop as it is.

This cake recipe is moist, delicious and irresistible. With one bite of this amazing cake, everyone is going to ask for more. Honestly it is one of the easiest cake I have made in my life and it is great to hear these wonderful compliments every time I serve it to my guests.
