Lebanese chicken vegetable soup
Chicken vegetable soup is one of my favorite soup, it is easy, light and healthy. I guess every cuisine has its specialty with the chicken soup, and there is no exemption for my special Lebanese one. Honestly I don't understand the remedy power of this amazing soup especially when someone in my family has a cold or not feeling well..this magical soup makes them feel better as well they also enjoy eating it.

Serves: 6 to 7
INGREDIENTS:
2 chicken breast or 6 chicken drumstick as you desire
one medium onion cut into pieces
2 cinnamon sticks
3 bay leaves
1 1/2 tsp salt
one tomato peeled and chopped
5 carrots peeled and cut
5 small Lebanese zucchinis or 2 large ones washed and cut
2 medium potatoes
1/4 cup chopped parsley
3/4 cup vermicelli noodles
3 tbsp rice
PREPARATION: place the chicken in a large cooking pot, add water and bring to boil and let it cook for 5 mins over medium heat. Clean all the white froth that comes up the surface. Now drain the chicken then put back into a pot, cover with boiled water, adding the cinnamon sticks, the bay leaves, the onion and the salt, then add the chopped tomatoes, the carrots and the potatoes, peel and cut as shown in the image. Cover and cook for 10 mins over medium heat cut the zucchinis without peeling , then add them to the pot finally add the rice after washing it and let it simmer for 10 mins. Now Roast the vermicelli noodles in a pan over medium heat without oil until golden, then add to the soup and at last the parsley. Let them cook for 5 more minutes.
The secret of this delicious soup is in its simplicity and the aroma of the cinnamon, bay leaves mixed with the rest of the ingredients. Finally the fragrance of this soup is completed with the flavour of the fresh parsley. Serve it in bowls hot or warm as you desire, crusty bread makes a perfect accompaniment !!
