Biscuits au chocolat"chocolate fudge cookies"
Biscuits au chocolat or chocolate fudge cookies: is a very simple and quick recipe, at the same time it is an amazing dessert which my children love and now my grandchildren. They always ask for grandma's yummy chocolate cookies.
Biscuits au chocolat is French for Chocolate cookies, it may not be a Lebanese origin or creation but it is known there. There are many different recipes in spite of its simplicity. I have been doing this amazing recipe for years, it is one of the easiest. You can put in the freezer and what's special about this recipe, you can make it from scratch with or without eggs.
Prep. time: 15 mins
Serves: 10 or 2 medium loaves
INGREDIENTS:
1/2 cup butter
1 tbsp of whisky
1 tsp vanilla
1/2 cup sugar and 1/2 cup icing or 1 cup sugar
2 eggs (optional)
1/2 cup of cacao
1/2 cup milk
4 tbsp cornstarch
55 to 60 plain biscuits "Marie"
Preparation: in a medium pot melt the butter over very low heat, add the sugar, the milk, whisky, vanilla, corn flour and the cacao. Now add the eggs if desired, mix well using a whisk then put it over medium heat until the boiling point, let it boils for 2 mins over low heat. Remove from the heat. Break the biscuits with your hands, add them to the chocolate fudge mixture and mix gently with a cooking spoon to combine.
Prepare 2 sheets of cling film or kitchen plastic sheets on a surface, pour the mixture divided into 2 parts on both sheets into round shapes of a log 7 cm thickness. Roll the cling film around the biscuit mixture, closing both ends then close firmly as shown in the image. Freeze at least 4 to 5 hours before serving. When your chocolate fudge cookie logs are ready, unwrap the cling film and slice the roll into 2 cm slices.
